You better make your reservation now because Linger is a very popular place (for good reason). Located in the Highlands district of Denver in the former Olinger Mortuary, the name and sign were cleverly altered into Linger Eatuary. The old stainless steel medical charts from the mortuary are now used as drink menus. Slightly morbid, yes, do I care, no because the food and drinks are so damn good. The genre is described as global street food and is similar to a tapas bar meaning they offer a large variety of small plates mostly in the $8-10 range. The menu is divided into categories such as, Americas, Asia, South Asia, Africa and The Middle East, Europe and Eurasia.
The entrance of Linger has a large skylight with plants hanging nearly to the ground.
Devils on Horseback- Applewood Smoked Bacon Wrapped Medjool Dates, Herbed Goat Cheese & Sambal Gastrique (Sambal is a chile based sauce similar to Sriracha and a gastrique is caramelized sugar deglazed with vinegar)
Red Lentil Dahl- Roasted Squash, Cilantro, Berbere Crème Fraîche & Crispy Lentils
Buttermilk Chicken Bun- Crispy Chicken, Kimchi, Sambal Honey & Scallions. Our friend got in trouble for this one because he finished it off quickly without offering his wife a bite!
Roasted Beet Bhel Puri- Puffed Rice, Crunchy Lentil Noodles, Chickpeas, Red Onion, Cashews, Fresnos, Cilantro, Raita, Peanuts & Apricot Chutney. Some critics have given this one a poor review because of the sheer number of ingredients. We loved it and thought that the varying textures made it so good.
Pork Ramen Noodles- Ginger Kombu (Kelp) Broth, Cucumbers, Poached Egg, Shiitake Mushrooms & Lots o’ Condiments. The broth had excellent flavor and the noodles were perfectly cooked.
Salmon Tagine- Currant Couscous, Harissa (Tunisian hot chili sauce), Moroccan Spiced Root Vegetables & Cucumber-Dill Raita (Indian spiced yogurt sauce)
Never Ever Beef Tender- Fried Brussels Sprouts, Plantain Mash, Chimichurri (Argentinian parsley, garlic and spiced olive oil sauce) & Pickled Onions. Perfect medium rare beef. The crispy and buttery brussel sprouts were amazing. I wish I could order a bucket of them at the movie theatre.
Masala Dosa- Crispy Rice & Lentil Crêpe, Masala Potatoes, Brussels Sprouts, Tamarind-Date Chutney, Black Mustard Seeds & Coconut-Mint Chutney. (Chutney is basically any combination of spiced vegetables or fruits traditionally ground with a mortar and pestle)
Churros- Cinnamon Sugar & Hot Chocolate. Every time we eat churros, it reminds Carissa of the most traumatic moment in her life when a bird stole the Churro out of her hand as a kid.
Peanut Butter Bar- Blueberry Jam & Devonshire Cream. The picture says it all. No matter how full you are, there will always be room for this!
Overall, this was an excellent restaurant. In fact, maybe the best we’ve been to in Denver. That’s why it’s on our website!
